When a Burgundy house as old as Maison Champy sets out to make a signature bottling you can bet it’s going to be great. Founded in 1720, they’re the oldest company in the region still operating. It was at Maison Champy where renowned scientist, Louis Pasteur set up a laboratory and developed the pasteurization method. When Pasteur published his findings, he gave special thanks to fourth-generation Beaune wine merchant, Claude Champy. Pasteur’s laboratory equipment can still be seen today when visiting the Maison. They’ve thrived over the years thanks to an abiding attention to detail plus deep relationships with key growers all along the Côte d’Or. Very typical of Pernand, white fruit, and an incredible intensity of wild herb aromas. Astonishing depth for this underrated appellation. Very ripe lime fruit that is underlined by fine tannins on the medium-bodied palate. Excellent harmony through the long, gentle finish. From west-facing, high-altitude vineyards that need to be late-picked because of the cool-climate location, but are among the winners of climate change.
