You are looking at one of the first, if not THE first, certified-organic sherry and let us tell you - it is delicious. Crisp and perfectly balanced, this beauty here hits all the good notes of a great Manzanilla, even if the solera is very young, hence the freshness and approachability. First bottled in fall 2023 from a newly established solera(that also needs to be organic) with just three years of ageing, this is a perfect example of a modernised style of dry sherry: clean, zesty, fruit-driven, with the yeast influenced toned down. A sherry that drinks feels featherweight and crisp, more like a coastal white wine than a fortified and long-aged one, with a characteristic Manzanilla olive-like tang and plenty of green apple juiciness. Salicornia is Spanish and Latin name for samphire, a saline plant strongly linked to the marshes and the coast of Cadiz. Dangerously drinkable!
