The Collets are the biggest owners on this hill with ten hectares divided up into fifteen different parcels. The Vaillons hill has an extremely high concentration of limestone marl in the topsoil at about 70% of the soil constitution, with the rest composed of a little clay and organic matter. An expressive nose of aromatic citrus oils and pear. The palate comes in with the expected concentration. This wine is energetic, yet anchored in cool depths of limestone and chalk. It has a salty tang and the allure of textured pear peel and citrus pith. 2021 is perhaps the first truly classic vintage in Chablis since 2014. It is a welcome relief after a string of warm to hot vintages in the last several years, and while there were certainly many amazing wines made during those times, for those of us who prize tension and mineral-laden acidity 2021 is a vintage to cherish (both for drinking young and for cellaring for the long haul).
