Les Équilibristes is a collective that makes wine from five different regions of France. Their wines are gastronomically minded. Dominated by Jacquère with a hint of Altesse, the Borboyon is a dry, textural white blend grown organically with minimal intervention from the alpine region of Savoie. It has delicate aromas of orchard fruit, quince, bergamot and flint. The palate carries light yellow fruit, citrus flavors, beeswax and a hint of butter marked by vibrant acidity and a gentle mineral edge. Enjoy this white with roasted chicken, lobster bisque or a tuna melt.
