50% Grillo, 50% Insolia from the vineyards of Fontane & Bastonaca. This is COS’ “orange” wine fermented and macerated on the skins in concrete vats for 8-10 days before pressing. Natural wine pioneers in Sicily, known for amphora aging and biodynamic farming. ‘Rami’ blends Biodynamically farmed, hand-harvested grapes 50% Grillo and 50% Inzolia for a lightly macerated white that balances freshness with texture. Short skin contact, aged in concrete vats, unfined/unfiltered.  Aromas of ripe apricot, orange peel, chamomile, and Mediterranean herbs. Golden-hued, with flavors of stone fruit, dried herbs, saline minerality, and a textured, slightly tannic palate.
