50-50 blend of Inzolia and Grecanico from the vineyards of Fontane & Bastonaca. This is COS’ “orange” wine fermented and macerated on the skins in concrete vats for 8-10 days before pressing. Natural wine pioneers in Sicily, known for amphora aging and biodynamic farming. ‘Rami’ blends Biodynamically farmed, hand-harvested grapes 50% Inzolia and 50% Grecanico for a lightly macerated white that balances freshness with texture. Short skin contact, aged in concrete vats, unfined/unfiltered. A bit rustic like some of the other orange Sicilian whites with honey notes, floral hints, grapefruit oils, herbs, Earth, and tons of minerality. Aged in stainless steel gives it a mouthful of floral notes and fruit flavors. Long and textured finish.
