One of the rising stars of the Languedoc, Jean-Louis Denois makes exciting, world class wines that nonetheless remain amazingly inexpensive, owing to his location more than anything else. His vineyards sit in the very southwestern corner of France, at the foot of the Pyrenees, and he produces red, white and sparkling, all made from perilously low-yielding vines, vinified with as little interference as possible. Jean Louis Denois, originally from Champagne, is a winemaker with a strong, unconventional character. A longtime advocate of organic and sulfite-free farming, he is also renowned as a master of Crémant production. A testament to this is his Pet'Nat Petit Louis, crafted using the ancestral method, the oldest and most natural in the world for producing sparkling wines. This naturally sparkling wine is a blend of Grenache, Syrah, and Merlot (organically grown). It fermented in the bottle with the remaining natural sugars of the grapes, without any additives, and was then disgorged to remove the natural yeast sediment and obtain a clear wine. Rosé in color, it is fruity (with strawberry aromas), balanced (no excess acidity), and simply irresistible.
