What an incredible experience! We were lucky enough to taste with expert Kerry San and Tamagawa Kinsho’s Philip Harper, the first non-Japanese sake master. Philip’s sakes are elegant but verge on non-interventionist: perfect for those interested in the natural wine movement. The cleanest option in his range, Heart of Gold is bursting with melon fruit and fresh salinity, with an underlying earthiness, bordering on umami character. The silky texture will impress up front, but it’s the quality and creativity behind the brewery that will keep me coming back. This is easily one of my favorite sake discoveries.
